sourcing.

we cup hundreds, choose dozens — and source from five farms we’ve walked, in ethiopia, peru, and guatemala. by name, never by lot number.

02 — fire

roasting.

every tuesday at first light, théo fires the 10-kg drum. 80 lb a week, profiled batch by batch, balanced for aroma above all else.

03 — pour

grinding.

ground per cup, never in bulk. the bag stays sealed until your order — so the aroma reaches you, not the room behind the counter.
